5 Amazing & Easy Baked Oatmeal Recipes

Oatmeal is amazing. This whole grain is a great source of soluble and insoluble fiber, and can help lower cholesterol and blood sugar. Plus it's so versatile!

There is a flavor for every season, diet and occasion. It's a simple, easy to make breakfast and perfect for those slow mornings when you want a decadent meal!

All the baked oats recipes are made with a base of Pinole Chia Oatmeal. The Pinole Project's signature blend is high-fiber and packed with protein. Each of the flavors (Banana Cinnamon, PB + Cacao, Original) are great for baking!

1. Coffee Cake Baked Oats

 

Coffee lovers rejoice! This coffee cake baked oatmeal recipe was so good and was basically breakfast, cake & coffee all in one! As a coffee-lover, this hit the spot. Super filling and wakes you right up in the morning! Also, so simple to make. Try it out!

INGREDIENTS

  • 1/2 cup Pinole Chia Oatmeal Original flavor
  • 1/4 cup cold brew concentrate
  • 1/4 cup milk
  • 1/2 banana
  • 1 scoop protein powder
  • 1 tsp baking powder
  • Pinch of salt
  • For toppings: Half of protein bar (crushed up), brown sugar

INSTRUCTIONS

  1. Blend together the following Pinole Chia Oatmeal, cold brew concentrate, milk, banana, protein powder, baking powder and salt
  2. Pour mixture into a greased ramekin and top with half of a crushed up protein bar
  3. Sprinkle brown sugar on top!
  4. Bake at 400 degrees Fahrenheit for 18 minutes 
  5. Enjoy!

2. Healthy Tiramisu Baked Oatmeal

 

This Tiramisu Baked Oatmeal is one of my favorite healthy breakfast recipes when I’m craving something sweet. If you’re a tiramisu lover, or a coffee lover, you’re gonna love this! It's super indulgent but still healthy.

INGREDIENTS

  • 1/2 cup Pinole Chia Oatmeal
  • 1/4 cup cold brew or coffee
  • 1/4 cup milk
  • 1/2 banana
  • 1 tsp cacao powder
  • 1 tsp instant espresso powder
  • 1 tsp baking powder
  • Pinch of salt
  • 1 scoop chocolate protein powder
  • TO TOP:
  • 3 tbsp yogurt
  • 1 tsp Maple Syrup

INSTRUCTIONS

  1. Blend together the following: Pinole Chia Oatmeal, cold brew or coffee, milk, banana, cacao powder, instant espresso powder, baking powder, pinch of salt, chocolate protein powder.
  2. Pour mixture into a greased ramekin (should be cake batter like consistency)
  3. Bake at 400 degrees F for 18 mins!
  4. While it’s baking, mix together 3 tbsp of yogurt mixed with 1 tsp of maple syrup, and then top the oats with the yogurt mixture and sprinkle with cacao powder!
  5. ENJOY this super fancy & balanced breakfast and rule the day!

3. Cinnamon Pear Baked Oatmeal 

 

Cinnamon spice, fruity freshness, this Cinnamon Pear Baked Oatmeal recipe is a super easy and absolutely delicious breakfast. It is literally like eating a pie for breakfast! The flavor combinations in this one are unreal.

INGREDIENTS

  • 1/3 cup oat flour
  • 1/4 cup Pinole Chia Oatmeal
  • 1/2 banana
  • 1/2 cup milk
  • 1 tablespoon vanilla protein powder
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1/2 pear (ripe)
  • Chopped pecans
  • Brown Sugar
  • 1 tsp Almond butter
  • 1/4 tsp Coconut Oil

INSTRUCTIONS

  1. Pour the following into greased ramekin: oat flour, Pinole Chia Oatmeal, banana, milk, vanilla protein powder, cinnamon, baking powder, vanilla extract, pinch of salt
  2. Chop up 1/2 a ripe pear into bite size pieces, and mix them into the batter, and then putting some on top of the batter as well.
  3. Sprinkle 1 tablespoon of chopped pecans, 1 teaspoon of brown sugar and sprinkle cinnamon on top of everything.
  4. Bake at 400 degrees Fahrenheit for 18 minutes.
  5. While it’s baking, mix 1 teaspoon of almond butter mixed with 1/4 teaspoon coconut oil and microwave for 20 seconds.
  6. Drizzle it on top of the baked oats, and voilá!! The most delicious breakfast ever.

4. Peanut Butter Mocha Baked Oats 

 

Sweet, creamy and delicious! Enjoy the amazing combination of chocolate and coffee with this peanut butter mocha baked oatmeal recipe. Get ready for a flavor explosion!

INGREDIENTS

  • 1/2 cup Pinole Chia Oatmeal PB & CACAO flavor
  • 1/2 banana
  • 1/4 cup cold brew
  • 1/4 cup milk
  • 1 scoop of chocolate protein powder
  • 1 tsp instant espresso
  • 1 tsp baking powder
  • 1 tsp cacao powder
  • Pinch of salt
  • 1 tablespoon Peanut Butter
  • Dark chocolate pieces

INSTRUCTIONS

  1. Blend together your Pinole Chia Oatmeal, banana, cold brew, milk, chocolate protein powder, instant espresso, baking powder, cacao powder, pinch of salt and peanut butter.
  2. Pour mixture into a greased ramekin and top with dark chocolate
  3. Bake at 400 degrees F for 18 mins.
  4. Enjoy some oatmeal heaven!

5. Peanut Butter and Jelly Baked Oatmeal 

These PB&J Baked Oats are the best! All the flavors of our childhood favorite packed into a bowl of delicious oatmeal! This baked oats recipe is filled with peanut butter and jelly in the inside and more is then added on top. Soooo good!

INGREDIENTS 

  • 1/2 cup Pinole Chia Oatmeal
  • 1/2 banana
  • 1/2 cup milk
  • 1/4 cup mixed berries
  • 1 scoop protein powder
  • 1 tsp baking powder
  • Pinch of salt
  • FOR INSIDE: 1 tsp of peanut butter and 1 tsp of jelly
  • FOR TOPPINGS: 3 sliced strawberries, more peanut butter and jelly

INSTRUCTIONS

  1. Blend together all the ingredients
  2. Pour half of the mixture into greased ramekin.
  3. Put 1 tsp of peanut butter and 1 tsp of jelly in the center. Pour the remaining batter on top.
  4. Bake at 400 degrees F for 20 minutes.
  5. I topped mine with 3 sliced strawberries, 2 tsp of peanut butter and 2 tsp of jelly.
