Healthy Churro Baked Oats for Cinco de Mayo

I still remember the feeling I had making churros as a girl with my abuela Adela at her home in Chihuahua, Mexico. The sweet aroma of cinnamon sugar and crisp fried dough. The importance I felt as I mixed the sugar, cinnamon and butter together. The smiles we shared as my abuela imparted her baking wisdom. Oh, and the taste. The melt-in-your mouth deliciousness as I took the first bite of my warm, homemade churro.

This Churro Baked Oatmeal I will be sharing with you in celebration of Cinco de Mayo encompasses her delicious Churro recipe but in a new form.

My name is Maya Jacquez, founder of The Pinole Project. My abuela Adela is the inspiration behind our Pinole Chia Oatmeal, a protein-packed, high fiber plant-based breakfast. Our blend incorporates Pinole, an Aztec superfood made with non-GMO heirloom Olotillo corn from Oaxaca, Mexico. Oats, chia seeds, and other powerhouse ingredients are also added to provide a tasty, nutritious meal.

I hope you enjoy this recipe, which incorporates the amazing ingredients that make churros the irresistible dessert they are but in a healthy, easy way. Happy Cinco de Mayo from The Pinole Project!
