Banana Bread with Pinole Chia Oatmeal

Next time you you have some overripe bananas, this is a perfect recipe to make high protein and fiber banana bread!

Banana bread is the ultimate cozy meal during the winter time. It requires minimal prep, and it's also just so versatile as a delicious breakfast treat, mid-afternoon snack, or healthy dessert!

Ingredients You'll Need:
  • 1/2 cup of salted butter
  • 1/2 cup broken down piloncillo
  • 3-4 overripe bananas
  • 1 cup all purpose flour
  • 1 cup Pinole Chia Oatmeal
  • 1/2 cup sugar
  • 1tsp of baking soda
  • 2 eggs

How to Make:

  • To a measuring cup, add half a cup of salted butter
  • Add half a cup of broken down piloncillo (unrefined whole cane sugar)
  • Microwave the mix for 30-45 seconds (the warm butter softens the piloncillo), and set aside
  • In a medium size bowl, mash 3-4 overripe bananas
  • Add 1 cup of all purpose flour
  • For extra protein and fiber, add 1 cup of Pinole Chia Oatmeal!
  • Add 1/2 cup of sugar and, melted butter with piloncillo, and 1 tsp of baking soda, and 2 large eggs
  • Mix well then add and mix 1 cup of chopped walnuts
  • Transfer batter to a 4x8 coated loaf pan
  • Bake at 350 degrees for 45 minutes -1 hour
